For an accurate temperature, insert the point of the stem (at least 2-inches) into the oil without it touching the bottom of the pot, slide the red indicator to the target temperature, and cook food according to recipe. For ongoing accuracy, the thermometer is easily recalibrated as needed with the simple use of a wrench. Perfect for candy making, from thread to hard-crack stages, and making jelly, too.
